Bouillabaisse is Marseille’s famous fish stew, made with several kinds of Mediterranean rockfish and served in two courses: first the saffron broth with toasted bread and rouille, then the fish. A proper bouillabaisse is expensive, usually around €60–€100 per person in 2026, because it needs a lot of fresh local fish. Traditional restaurants such as Chez Fonfon, Le Miramar and Chez Michel serve it, and some ask you to order a day ahead.

What goes into a real bouillabaisse

Bouillabaisse began as a fishermen’s meal made from the bony rockfish they could not sell. Today it is a celebration dish. The fish are cooked in a broth with olive oil, tomato, onion, garlic, fennel, orange peel and saffron. Typical fish include rascasse (scorpionfish), which is considered essential, as well as gurnard, weever, conger eel and John Dory.

In 1980 a group of Marseille restaurants signed a Bouillabaisse Charter to protect the traditional recipe and service. You will still see that tradition in the best places: the fish are shown to you whole before being served.

How bouillabaisse is served

  1. The broth arrives first, with slices of toasted bread and a bowl of rouille, a garlic and saffron mayonnaise-like sauce.
  2. Spread rouille on the bread, float it in the broth, and eat.
  3. The fish is presented, filleted and served with potatoes and more broth.

Order with care: a real bouillabaisse is usually for a minimum of two people. If a menu offers it cheaply without asking in advance, it is probably a simpler soup.

Where to eat bouillabaisse in Marseille

  • Chez Fonfon (Vallon des Auffes) – in a tiny fishing harbour just along the coast from the old port; one of the classic addresses.
  • Le Miramar (Vieux-Port) – on the old harbour, long associated with the traditional recipe.
  • Chez Michel (near the Catalans beach) – a long-established fish restaurant known for bouillabaisse and bourride.

Prices, hours and booking rules change. Check with the restaurant and book, especially in summer.
