The waiter sets down a shining copper pan shaped like a giant clam and flips open the lid at the table. Steam rolls out: tomato, garlic, coriander and the sea. Inside, clams, prawns and chunks of fish sit in a red, brothy sauce waiting for bread.

A cataplana is both a hinged copper pan and the seafood stew cooked in it, the signature dish of Portugal’s Algarve coast. The classic cataplana de marisco steams clams, prawns and fish with tomato, onion, peppers and herbs; many recipes also add chouriço or cured ham and a splash of wine, so Muslim travellers should ask for a seafood-only version. Cataplanas are cooked to order for two or more, and in 2026 cost roughly €30–55 for two people.

The pan

A cataplana looks like two copper bowls joined by a hinge and clamped shut. It works like a gentle pressure cooker: the ingredients steam in their own juices and keep all their flavour.

The design is often linked to the Algarve’s Moorish past. Today you can buy a cataplana in any Algarve market, from small souvenirs to full cooking pans.

Halal note: because cataplanas are cooked to order, most kitchens can make one sem chouriço, sem presunto e sem vinho (without chorizo, ham or wine). Ask when you order, not when it arrives. How to order and eat it

  • Cataplanas are usually for two or more; the menu price is often per person with a two-person minimum.
  • Allow 30–45 minutes: it is cooked from scratch.
  • Let the waiter open it at the table; the steam is part of the show.
  • Eat the seafood first, then soak up the sauce with bread or rice.
  • Leave empty shells in the lid or on the side plate provided.

Where to eat cataplana on the Algarve

  • Olhão – a working fishing town with a busy riverside fish market; restaurants nearby cook what came in that morning.
  • Tavira – a pretty town on a river, with many family seafood restaurants.
  • Faro – the regional capital, with good choice in the old town.
  • Portimão and Lagos – in the west, also famous for grilled sardines.

Look for restaurants busy with Portuguese families, and ask what fish is fresh that day.

When to go

  • May to October – warm weather and outdoor dining; July and August are busiest.
  • August – Portimão’s sardine festival, with sardines grilled in the open air.
  • Winter – quieter, cheaper, and cataplana is ideal on cooler evenings.
